Let’s Blog Over Shrimp Fettuccine…
Anything that starts with the letter P I feel is good for the soul. Think about it- Pasta, pizza, pastrami, potato chips, pretzels, pastries, pie. Did I mention Pasta?! Pasta such as the shrimp fettuccine we’re discussing in this post.
It will have been a week tomorrow since starting this journey with you all, and again I’d like to say thank you to everyone for offering your support. It’s kind of hard to believe that after so many years of dreaming about this, and friends and family telling me I should be writing a book about my love for food that it is finally happening. Hopefully next week I’ll be able to send out some newsletters to everyone that has signed up. To be honest my head is spinning with so many incredible ideas on where to take this. I sometimes feel overwhelmed, because even though I’m taking the steps to get me to where I want to be, I feel like I’m always two or three steps back. You know what I mean?
I’ve decided, thanks to some wise words from a friend recently, that this is going to be a project of grace. I’ve started a marathon, and if I leave the gates sprinting, I will most certainly burn out. So I’m trying to ease into things, to be kind to myself, and to throw the idea of perfection out the door. This project is meant to be life-giving – for me, and hopefully for you all too! – but if I’m not careful, it can and will absolutely suck the life out of me. I must have balance.
With that being said, I feel really exhausted right now, and the gloomy, cold, rainy weather isn’t helping. Did I mention today was also Monday? On days like today there is nothing I want more than to be in cozy socks, a huge sweater. You know what goes perfect with that? A book and a glass of wine paired with a delicious plate of pasta! For this recipe I used pure white Hennessey that I got from my visit to the Bahamas. You’ll notice there are not really any measurements. You’ll just have to eye and feel it. Taste as you go. Pasta is fun. You can do all sorts of wonderful things with it!
Here’s What You’ll Need
Shrimp (reserve shells)
Freshly Cracked Black Pepper
Red Pepper Flakes
Scotch Bonnet Pepper
Make stock with shrimp shells, water, and a little of the Hennessey. In a skillet coat the pan with Hennessy. Wait for it to get warm before you add the shallots, and half a stick of butter. Cook butter at low temp. Add shrimp stock, black pepper corns and fresh black pepper, heavy cream, a little salt, garlic and the scotch bonnet pepper.
Season shrimp with oregano and garlic powder, drop in sauce.
Boil the pasta. Once it’s cooked drizzle with olive oil. Add a lot of red pepper chili flakes, and add pecorino, and some basil. Mix it up. Add sauce and more pecorino.
Serve with side salad if you’d like.
