Let’s Blog Over Broccoli Rabe…
They say nothing heals the soul like chocolate, but I’ll tell you this- I make the best goddamn broccoli rabe!
Okay so we eat pretty healthy in my house and vegetables are a must every single day. As much as I love my green beans, I sometimes have to switch things up. Sometimes we have asparagus, or carrots. Sometimes Ralph demands broccoli. A vegetable that I love, and have been making a lot lately.
Not only does broccoli have so many great health benefits, but this tree looking vegetable made they way I make them taste incredible. Seriously. Make it.
Ingredients
- Kosher Salt
- 1 bunch broccoli rabe, tough, non-leafy stems removed
- Extra-virgin olive oil
- 4 cloves garlic, sliced
- 1 Tbs crushed red pepper flakes
Directions
Bring a large pot of well salted water to a boil. Set up a bowl of well salted ice water. Drop the broccoli rabe into the boiling water and cook for 1 minute. Remove from the boiling water and plunge immediately into the ice water. We’re going to shock it! Once cool remove from the ice water and let dry. It can be used right away or held for future use.
Coat a large cast iron skillet with the olive oil. Add the garlic and crushed red pepper and bring to medium heat. Add the broccoli rabe and toss around in the oil to heat up and season. Season with a little salt and pepper. Once its bright green and tender, it’s done. Serve immediately.
